Add it to the list

1 more goal today coming off of the bench. Both goals were scored when I came in. The first was an own-goal off of a corner and the next was a nice crack on goal with my right foot! We won 2-0. Sadan Piger!

Sushi Making

I have a good friend here I met in language school. She is originally from Singapore, so that is pretty sweet. One day she brought homemade sushi to class and gave me a ton to eat for lunch. It was AMAZING! I told her how much I love eating sushi and how I would love to know how to make it. Well…

 

 

 

 

 

 

 

It was actually super easy to make sushi! We used hard boiled eggs, cucumbers, seaweed tang salad, fried fish, avocado, caviar, and of course rice! She made sure to make a point that we understood you can put absolutely anything you wish to inside sushi when you are making it. She had even heard of someone using peanut butter! Go figure. Maybe in a later post I will write instructions for how to make sushi at home!

Personal Training

It’s official. I’ve started school again and I love it! I’m working on getting my associates in exercise science with different certifications in personal training, rehabilitation, and nutrition. Finally getting to study what I’ve always wanted to!

Figuring out Life

That is what I spent my day doing today. I felt productive and like I was looking at all the right things. I’m choosing to be vague now, so don’t expect much. Do expect a lot down the road though 🙂

Go outside and do something active today rain or shine! You’ll be happy you did. Don’t forget to drink a power smoothie while you are at it.

Success on the pitch

We had a game in Ballerup today which is a part of Copenhagen. We flew down there instead of making the 5+ hour bus ride. That’s always a nice treat!
We ended up winning 4-3. I got another start under my belt and played well. Unfortunately no goals for me today (which sucks because that is my job as the forward). Regardless, I felt ok about my performance and that is what matters.
I got myself a little treat in the Copenhagen airport… a sweet and savory soy vanilla latte from Starbucks. The Copenhagen airport is the only place in Denmark where you can find Starbucks so whenever I am there (which isn’t very often) I spoil myself. Unfortunately it was at 6 in the evening. Crossing my fingers that I fall asleep soon.

Spinach Pasta Salad

This is one of my favorite recipes. I just made it up myself by putting things together that I enjoy eating. I am able to make a huge portion that will last me about two days.

Ingredients:

  • 1 package bow tie pasta (whole grain is the best choice)
  • pine nuts
  • 1 package baby spinach
  • feta cheese
  • Olive oil
  • 2 chicken breasts

Directions:

First turn your oven on to bake the chicken breasts to 200 Celsius. I like to add some black pepper, a little salt, and oregano with a light sprinkle of olive oil to my chicken. I place the chicken inside tin foil and place it in a pan so I don’t make a mess and it keeps the chicken nice and juicy. In the mean time fill a large pot with water. Boil the entire bag of pasta. While waiting for the water to boil (depending on the quality of your stove this could take anywhere from 5 minutes to 1/2 an hour. Try cooking on a 2 plate burner for over a year…not so much fun) heat up a pan with just a bit of olive oil and lightly toast the pine nuts. When the noodles are done boiling drain the water and run the pasta under cold water so that they don’t all stick together. By now the chicken should be done (20-30 minutes). When you cut into the chicken you should not see any pink. It is important to make sure that chicken is cooked all the way through. Cut the chicken into small pieces, later to be added to the salad. Once the noodles have cooled down add the bag of raw baby spinach, feta cheese, pine nuts, and chicken. Toss it all together. I do not add extra olive oil until I am about to eat a helping of the pasta. Everyone has a personal preference to how much they like. Also, since I use the dish for about 4-6 meals it helps keep it fresher by keeping as much moisture off of the spinach leaves.

This is a great quick and easy recipe for people on the go. Just put a portion in a container and pack it in your bag for an afternoon snack or for lunch. Great boost of energy.

Tonight I made a fabulous dinner.

apple, breadcrumb, chicken burgers on whole grain buns with fresh made mango-pineapple salsa and homemade guacamole. DELICIOUS!

I was inspired with my recipe from another blogger at 321delish. Thanks for the ideas and great recipes!

    To make the chicken burgers I used 1 apple and a cup of bread crumbs combined in with the ground chicken meat. I first peeled the apple and then chopped it up into tiny pieces. I had to get inventive to get breadcrumbs. Since I don’t know how to find them in the grocery store here in Denmark I made them myself. I had ciabatta bread I had bought from the bakery 2 days ago. I cut off a couple of slices, cut them into as small of pieces as I could, turned the oven to 200 Celsius, sprinkled a bit of olive oil over the bread, set the rack on the top part of the oven and baked them until they looked brown and crispy (but not burnt). I baked them on parchment paper so when I took them out of the oven I slid the paper onto the counter, placed a new piece of parchment over the used one to set the bread in between both pieces. Next I took my handy dandy rolling pin that I have never used before and rolled the crispy bread into bread crumbs. And voila, homemade breadcrumbs! Who would’ve thought. Anyways, I threw these things in with the chicken meat and mixed it all together. I used my hands to form the burger patties, placed them in the freezer for 15-20 minutes while I prepared the salsas and to allow the patties to chill. After, I fried the chicken burgers on the stove for 6 minutes each side until cooked all the way through.

For the Guacamole I took 1.5 Avocados and smashed them in a small bowl. I added half of a red onion chopped finely, some salt, and the juice of half a lime. Lastly I added some tomatoes fresh out of the garden! Mmmm.

For the Pineaple salsa I used 1/2 of a fresh pineapple chopped, 1 mango finely chopped, 1/2 chopped red onion, 1 tsp olive oil, and the juice of half a lime.

I gotta make these 2 things more often!

Highlights

Lots of highlights today.
It was sunny and warm most of the day.
I got a new backpack from the club…it is cute
I got new cleats from the club and they fit perfectly and I love them.
My feeling of “I work way too hard at training everyday compared to others” was validated today thanks to our new team heart rate monitor system that tracks our pulses the entire practice. Now I have to figure out how to use my energy in the right way to make me a better player instead of just a player who works really hard all the time so she doesn’t have enough energy to do the specific things of a striker as well as she could kind of a player.
I had the cheapest most amazing wholesome large salad of my life today. I never thought I would ever find this in a cafe in Denmark.
I got a free round trip to Aalborg today so saved some $$.

So many positives that I am exhausted now.

dinner for 4

What a great day! It almost felt like summer weather today. Every time this happens I think oh this is the last day. I think I have thought that 20 times in the last month…must’ve been a lot of good days of weather mixed in with all the bad 🙂

Tonight I had dinner in Tylstrup with my 2nd Family. It was delightful. We had 3 languages going on simultaneously. Norwegian, Danish, and American. Luckily I understand all 3 now (I just picked up the American 😉 ). One would start in Danish and one would answer in Norwegian and then I would answer in either Danish or American. Whichever I felt like for the topic of conversation we were on at the moment. I love everything to do with different languages, so this was a blast for me and a big sociology moment ha. culture, culture, culture. Gotta love it!

We ate homemade pizza in case anyone was wondering what was on the table.

There was much much more that happened today, but not enough time for me to write about tonight. Already past 10 which means already past my bedtime! I’m such an old lady! geez.
